Believe it or not, rafting a river builds up quite an appetite! Which is why we always provide a filling lunch and tasty snacks along the way. Our staff all have their own favorite lunches, but Candy's pick is the guacamole served up alongside the build-your-own-burrito buffet - tortillas, sliced meats, tomatoes, olives, lettuce, cheese, salsa, and the MAIN ingredient... guacamole! It's a delicious way to refuel before getting back out on the river.

Holy Guacamole

Servings: 4

Prep Time: 10 minutes

Ingredients

3 ripe avocados, peeled, pitted, and mashed up

1 lime, juiced

1 tsp salt (or to taste)

3 tbsp fresh cilantro, chopped

2 Roma tomatoes, chopped

1/2 c yellow or sweet onion, chopped

1 tsp garlic, minced

A couple dashes ground cayenne pepper (if you'd like)

Directions

Now for the fun part! Mash together the avocado, lime juice, and salt. Mix in the cilantro, tomatoes, onion, garlic, and pepper until well combined. Let sit in the fridge for about an hour, or serve immediately (because who can wait that long??).
